What the menu says comes first. For someone who eats vegan the best is a 100 % plant-based place: no hidden stocks, butter, egg in the pasta or fish sauce, and no frying in the same oil as meat (The Vegan Society). Otherwise, main dishes marked or unmistakably vegan, not sides. A menu scores if the whole place is vegan (45), for each vegan main (4, up to 32), for each different protein source such as tofu, tempeh, seitan, heura or legumes (3, up to 9), and for vegan desserts (5), plant milks (4) and dishes marked on the menu (5). Each place gets a score from 0 to 100 and the list follows that order; under each one you will see why, and the dishes that justify it.
