How we choose

- What the menu says comes first. For someone who eats vegetarian what counts is real main dishes (not sides or «one salad»), with varied protein: legumes, tofu, tempeh, eggs, cheese, nuts (Academy of Nutrition and Dietetics). A menu scores if the whole place is vegetarian or vegan (45), for each vegetarian main (4, up to 32), for each different protein source (3, up to 9) and if dishes are marked on the menu (5). Each place gets a score from 0 to 100 and the list follows that order; under each one you will see why, and the dishes that justify it.
